Two mezcal aficionados, driven by a fiery vision, embarked on a pilgrimage not only of distance but of soul. Seeking to redefine luxury spirits with the wild, unrestrained essence of mezcal, they traversed ancient landscapes, seeking out manifestations of ancestral artistry and the raw vitality of the agave plant.


Crafted from the most enigmatic Oaxacan agave in collaboration with master Mezcaleros, our award-winning mezcals pay tribute to tradition while embodying rare beauty. Each sip, smooth and exquisitely balanced, invites exploration—a call to those who embrace the road less traveled, where every moment is infused with the romance of the extraordinary.

Our Brand

Our name comes from the expression in Spanish: “Más raro que un perro verde” (in english, rarer than a green dog)

The origin of the saying itself is the rare phenomenon when puppies are born with light green fur due to contact with a pigment found in the mom’s gall bladder called biliverdin.

Perro Verde is produced from rare plants, with careful craftmanship, in numbered small batches. The nahual on our bottle represents the mystical connection of the journey to self-discovery.

Our commitment is to deliver the most authentic, highest quality, rarest liquid available and to immerse our community in experiences that express our love of eccentricity, for those who enjoy the road less traveled.

Our Approach

At Perro Verde, innovation and craftsmanship shape every part of the process. The art of taking time to make sure things are done right.

Our agave nursery secures the future of both Espadín and wild Tobasiche through an active replanting program. We use time-honored methods—slow roasting in a pit oven, cold fermentation in pine-wood casks, copper still distillation, and zero additives—refined to control every step of the way.

At the same time, we care for the environment with energy-efficient tools: our gas-ignited oven ensures even heat distribution through the lava rocks for precise cooking and a smoother mezcal. This system also reduces wood usage by 90% and decreases smoke exposure for workers. The palenque itself is built on a slope, allowing the process to flow downhill naturally and efficiently. Water and agave fibers are treated and repurposed as natural fertilizer and irrigation.

From field to distillation, every step reflects our commitment to sustainability, innovation, and craftsmanship.

Perro Verde was born from a shared vision of craftsmanship, love for nature's rare beauties, and the belief that mezcal should be smooth, allowing the flavors and aromas unique to each plant to shine—and never be overpowered by smoke or alcohol. Together, they crafted a spirit that honors ancestral traditions backed by innovation that celebrates the rare.

Juan Santiago Rodriguez and Mariana Carvajal are the driving forces behind Perro Verde. They bring structure to a dream, fueling the ambition to share rare mezcal expressions with those who seek the extraordinary. With a fashion luxury background, the brand’s creative soul draws on elements of antique apothecaries, botanical elegance, and mysticism, creating a sensorial universe around the spirit—transforming Perro Verde into more than just a mezcal: an experience.

At the heart of it all is Porfirio Chagoya and his family—a master mezcalero and heir to a 120-year family legacy. Blending ancestral craft with innovation, he transforms agaves into smooth, refined, sustainable, and deeply expressive mezcals that appeal to a wider audience.

Captivated by Perro Verde’s enigmatic liquid and storytelling around the rare and exceptional, actor Benicio del Toro joined forces and became more than an ally. With his enigmatic spirit—a true example of what a Perro Verde is—he contributes to building an exceptional brand around an outstanding liquid from a magical place called Oaxaca.
